  • Season: summer
  • Production area: Chestnut forests of the mountain range of the Northwest of the peninsula and Andalusia.
  • Colour: from amber to dark amber. With light brown and green tones, above all in the upper part where honey is in contact with glass.
  • Smell: floral, with a clear and defining wood component, similar to dry wood.
  • Taste: sweet with salty notes and frequently sour if it contains heather, and acid notes with the presence of broom.
  • Touch: slow crystallization, except when it contains leguminous components.
