Description

Season: Early spring
Production area: calcareous areas of the center and southeast of the Spanish area.
Colour: very light
Smell: little intense, medium persistence, floral with camphorated notes and new wax. The retronasal aromas increase, appearing fruity notes if it bears almond and farinaceous if it is rich in fabaceae.
Taste: sweet, usually without more. Sometimes with slight acid notes and fatty palate sensation if it is rich in chupamieles.
Touch: fine crystallization if is rich in almond, and thick if is rich in rabaniza.
