- Season: Early spring
- Production area: calcareous areas of the center and southeast of the Spanish area.
- Colour: very light
- Smell: little intense, medium persistence, floral with camphorated notes and new wax. The retronasal aromas increase, appearing fruity notes if it bears almond and farinaceous if it is rich in fabaceae.
- Taste: sweet, usually without more. Sometimes with slight acid notes and fatty palate sensation if it is rich in chupamieles.
- Touch: fine crystallization if is rich in almond, and thick if is rich in rabaniza.
Rosemary honey is produced by bees when they sip from Rosemary flowers.
